Post-Thanksgiving is an excellent time to experiment with gluten-free versions of traditional menu items, as well as think outside the box when it comes to turkey leftovers. This is an easy salad for topping off a chef salad or slathering on fresh gluten-free bread. I like this salad served in slightly warmed brown rice tortillas. The salad contains 1-1/2 cups seedless grapes, 2-3 cups pulled roasted turkey, 1 cup celery, 1/2 Honeycrisp or Pacific Rose apple, sliced almonds or cashews, 1 cup mayonnaise.

These are so quick and easy. The recipe I once used called for lots of butter, flour, and sugar. I got rid of the flour, cut the sugar in half, cut the butter by more than half, and found these cookies to taste every bit as good as the original. Ingredients: 1/8 stick butter cut in "pats" 1/4 cup unsweetened cocoa 1 1/2 cups sugar 1/2 cup whole milk 2 tbsp. peanut butter 2 3/4 to 3 cups oatmeal Melt butter. Pour in cocoa until it begins to soften a bit. Dump in sugar last and whisk in the pan over medium heat (you might have to remove pan from heat to keep sugar from crystallizing). Whisk quickly, pour in 1/2 cup milk. Remove from heat and whisk. Add 2 tbsp. peanut butter and whisk in pan back on medium high. Remove from heat. Add oatmeal. Stir. Spoon out in tablespoons on pan. Let them solidify before serving. This is a habanero pepper, and I now treat it like the welcome guest of summer. I try to grow several plants each year. They're prolific, and I've learned that in moderation, they add more heat than fire to chili. They are a great companion to beef dishes. I've used them in steak marinades, beef chili, and in soups to build character in the broth. Here is the recipe for crockpot vegetarian chili.
Crockpot Vegetarian Chili 4-5 cans Chili Magic beans 1/2 to 1 whole bell pepper diced 1/2 Vidalia onion diced 1 clove garlic diced red pepper flakes to taste 2/ tbsps. Cajun seasoning three small slivers of ripened habanero pepper 1 can Rotel 1 can diced tomatoes 1/4 can tomato sauce Cook at least four hours in crockpot on high. You can add marinated baked chicken or ground beef. |
