After a year of snubbing gluten, I am still asked the repetitive question, "What in the world do you eat?" I have spent the better part of the year collecting recipes via facebook and the web, tweaking famous chefs' recipes and substituting gluten-free flours. I'm nearly ready to add these to this site. My energy is way up, and my productivity has more than tripled since dumping gluten. I have lived without debilitating fatigue and pain that used to define me. My favorite sites so far are: gluten free mama, big man's world, and the gluten free group for celiacs on Facebook. The school year is almost through, and I am still sold on the lifestyle as the answer to ending pain from inflammation and living a full life.
